Engineering Laboratory

This laboratory deals with the process and product design of food commodities. It also offers technical assistance to the different sectors of food industry, especially those involved in product development of oversupplied fruits and vegetables to minimize food waste.

Food Chemistry Laboratory

This laboratory is equipped with instruments for analytical procedures that are essential for product development and nutritional labelling. It also offers analytical services, which aim to help clients analyze their samples using existing protocols and apparatus.

Food Biochemistry Laboratory

Biochemical and microbiological analyses, as well as product development, are performed in this laboratory. It is also a venue for the laboratory class of FST 202 (Advance Food Analysis), which is taken by graduate students.

Food Safety Laboratory

This laboratory is dedicated in housing experiments dealing with microorganisms of public health significance. Technical assistance for micro, small and medium enterprises about proper handling of food is frequently conducted in this laboratory.

Food Microbiology Laboratory

Characterization of microorganisms, which are isolated from food products, is the main activity in this laboratory. It is also dedicated in improving the quality of different fermented foods in the country. This Laboratory is well known for producing wine made from different local fruits such as bignay, lipote, passion fruit, duhat, and mango.

Pilot Plant

This facility is newly renovated in compliance with standards for pilot scale production of food commodities. It houses the Food Innovation Center, which aims to develop 50 products using spray dryer, vacuum fryer, water retort, freeze dryer, cabinet dryer, band sealer, freezer, and vacuum sealer.

Sensory Laboratory

Sensory attributes are one of the most important quality of food. This aspect is thoroughly analyzed in this laboratory. It has a kitchen for food preparation and cubicles where panelists evaluate the food samples using appropriate sensory test. This laboratory is also used by students enrolled in FST 151 (Sensory Analysis).
